Class K fire extinguishers are essential safety devices designed to combat kitchen fires. These large stainless-steel cylinders contain wet chemical agents, such as potassium acetate, potassium citrate, or potassium carbonate, specifically formulated to address fires caused by cooking oils.

When deployed, these extinguishers smother the fire through a process known as saponification. This reaction creates a soapy foam that coats the burning material, cutting off its oxygen supply and preventing re-ignition.

It is crucial to have Class K fire extinguishers in all commercial kitchens, including those in restaurants and schools. To ensure quick access in emergencies, these wet chemical extinguishers must be properly mounted within 30 feet of the cooking line.
